    “Burgers are the new sushi. Only two components are needed for success: high-quality meat and good buns,” says restaurateur Arkady Novikov. Unpretentious fast food, which a few years ago was strongly associated with McDonald's and Burger King, has become the mainstream of the capital's restaurant market. New burgers open on every corner. One of the reasons for the flourishing is the emergence of affordable Russian-made marbled beef.

    The trend was set a few years ago by food trucks (food trucks) and street food festivals, where The Burger Brothers, Burger Heroes and other similar projects debuted. Burgers were in demand, and aspiring restaurateurs moved from mobile points to stationary premises. “None of us had experience in the restaurant business. But we did everything ourselves, studied at the same time, ”says Alexander Zalessky, founder of The Burger Brothers.

    In the spring of 2015, heavy artillery joined in: Arkady Novikov opened the first #FARSH burger joint. Now he is launching the fifth establishment of the network. In July last year, another well-known restaurateur Alexander Rappoport opened a meat restaurant and a burger shop Voronezh. In September 2016, the Black Star Burger eatery, owned by rapper Timati and his partners, opened on Novy Arbat, and huge queues immediately lined up at the establishment.     The BB & Burgers sign (Beer, Buns and Burgers) looks unexpectedly on the facade of a garage-like building on the Central Street of Glukhovo village. Usually in such premises there are cheap roadside cafes, but not trendy burgers. Around - the private sector, modern cottages side by side with wooden huts, and "Lada" - with "Mercedes". “I was looking for a place for three months,” says Ivan Kukarskikh, 27-year-old founder of the BB & Burgers burger chain. - I drove all the Ilinskoe highway from Novaya Riga to Rublevo-Uspensky, went into every room along the road, tried to negotiate a lease. This is the “golden mile”: there is no other such location beyond the Moscow Ring Road.”

    Ivan just returned from Switzerland in 2012, where he studied hospitality management at the Ecole hoteliere de Lausanne. During my studies, I often went with university friends to the local Holy Cow burger joint. “I already realized then that high-quality premium meat burgers are a promising trend that is gaining momentum,” says Kukarskikh. Ivan liked the format so much that he even defended his diploma on this topic: he presented a business project for a burger shop to teachers.

    Kukarskikh studied for 12 years in Canada, Spain and Switzerland, but decided to return to Russia: “In Canada and Spain, the mentality is too different from us, and in Switzerland it’s just boring.”

    In Moscow, he nevertheless decided to start not with burgers, but with the Farmer culinary cafe. “Cooking seemed to me a simple and understandable format, I wanted to build a large network,” says Ivan. His father, Pavel Kukarskikh, entered the restaurant business in the 1990s, opening his first restaurant, Mister N, in Yekaterinburg. By 2007, the company of Kukarskikh Sr. "Malachite" became the largest restaurant operator in Yekaterinburg. His network of bakeries "Paul Bakery" has ten cafes in Moscow and 45 throughout Russia.     In Moscow, Ivan did not have to be bored. First of all, he launched cooking in the village of Malakhovka near Moscow, where the production of blanks from the Paul Bakery network was located.     But as soon as cooking was launched at the other end of the Moscow region, on Ilyinsky Highway, serious problems began. “In cooking, there is usually a huge percentage of write-offs, from 50%, but ours was even higher,” Kukarskikh recalls. “The production was located in Malakhovka, people did not see where and how the food was prepared, and they did not trust us.”

    The project, in which Ivan also invested 2 million rubles, worked in the red. When the losses exceeded 300 thousand rubles in the third month of operation, Kukarskikh Jr. decided that it was time to change the concept and realize an old dream - to make a burger joint.


    Burgers and rock and roll

    The burger joint project that the entrepreneur advocated in Switzerland did little to help. “A beautiful business plan and reality are just different planets,” says Ivan. He drew knowledge about cooking meat from YouTube. Before the start, I watched hundreds of videos about how burgers work in the USA and other countries, how to fry meat correctly. The father helped with advice: he supported the son’s idea to do something of his own, and not work in the family company, and he lent money for the first institution. “In our family, 80% of conversations are still about food and catering. Sometimes my father asks that, they say, I can only talk about burgers on dates with girls too? Ivan laughs.

    The cookery was turned into a burger place in two weeks: they bought a grill and an extractor hood, in total, 200 thousand rubles were spent on equipment. Meat was a problem. Then, in 2012, marbled beef, according to Ivan, was still considered an exclusive product and cost several times more than now. He agreed with farmers and dealers on the supply of chilled beef and began to fry the meat.

    “At first I wanted to make such a cute European cookery in white colors - the consumer did not understand,” says Kukarskikh Jr. - Then I thought: well, get it - grill, meat, onions. We started playing rock music in the background, allowing guests to draw on the walls with felt-tip pens while waiting for their order.” It worked: already in the first week they began to sell burgers and french fries for 15-20 thousand rubles. per day, and according to the results of the first month, the turnover amounted to 600 thousand rubles. Cooking earlier in the same place brought only 450 thousand rubles.

    A novice entrepreneur made a mistake that nearly cost him his business. “I bought the hood myself, and the owner of the premises installed it; we had no idea there were supposed to be filters. And once, in the second month of the burger shop, I open the door, and smoke comes out from there: it turned out that the hood was clogged, miraculously there was no fire, ”recalls the entrepreneur.

    In total, about 3 million rubles were spent on the launch of the burger restaurant, the institution reached operating profit in three months, and now the “garage” on Ilyinsky Highway brings 3-4 million rubles. revenue per month, profit exceeds 500 thousand rubles. “If I didn’t make all the mistakes and didn’t start cooking first, I could meet 1 million rubles,” the restaurateur calculated.

    When in the spring of 2014 the first point began to consistently make a profit, the entrepreneur decided that it was time to scale up the business. “I understood that we were in a trend, we have a positive trend, but it was very scary. It is psychologically difficult to jump from a rent of 120 thousand rubles. per month immediately for 600 thousand rubles, which was in the center. After all, in order to recoup such costs, it was necessary to make sales three to four times higher, ”recalls Kukarskikh.

    One of the most popular burgers in Moscow at that time was Burger Brothers on Krasny Oktyabr. Ivan focused on her. “I thought they were cool, and we are sitting in the back. I even took their bun and went to my bakers, said “I want the same one,” recalls the restaurateur. What he didn't know was that The Burger Brothers had a lucky lease. “We were approached by the owners of the Produkty cafe-bar on Krasny Oktyabr, who had a small room with a window to the street, they offered us to take it on partnership terms - for a percentage of the profits,” says Alexander Zalessky, founder of The Burger Brothers.

    Kukarskikh found a room of 65 sq. m on Tsvetnoy Boulevard, whose owners agreed to provide two months of rental holidays, and began to prepare for launch. It took 4 million rubles to rent, repair and equip a new point. Ivan claims that he earned this money at the first burger.

    “I thought that we worked out all the processes with our small team that worked at Ilyinka, selected the most popular menu items. But in reality, we weren’t ready for anything, everything went wrong,” Ivan recalls. The fact is that the traffic of customers in the center was much higher than on Ilyinsky Highway, the team did not have time to cook burgers and keep clean. Customers were waiting in lines, tables were littered with rubbish. The chefs could not keep up with the pace of work and quit after a month. “We managed to exhale only in the third month, when we reached zero and formed a team. I understood: everything, we were hooked in the center. There is our sign here,” says Kukarskikh.

    Drunk Granny effect

    Today, there are already nine establishments operating under the BB & Burgers brand in Moscow and the Moscow region; the first two belong to Ivan Kukarskikh, the rest he opened with partners. “I often came to the first burger on Ilyinka and saw how everything was arranged there, I believed in the idea even then,” says Bogdan Panchenko, who wholesales vegetables to Azbuka Vkusa stores. He invested 2 million rubles. in a burger on Sretenka and the same in a cafe on Novy Arbat, in return he received 15% in both establishments. According to Bogdan, the investments paid off in a year and a half after the opening.

    “The most difficult thing now is not even to attract money, there are always quite a lot of people who want it. It’s hard to find good venues,” says Kukarskikh Jr. According to him, he works with the largest real estate agencies that are looking for good points in the capital's commercial real estate market, but still have to make compromises. For example, for a burger shop on Maroseyka, a room was found that previously housed the Volkonsky bakery. But the site was too big, and Ivan suggested that his father open a "Paul Bakery" in the neighborhood. On Pyatnitskaya, according to the same scheme, the father and son shared the premises of the former shoe store.

    According to the businessman, the average monthly rent for a burger bar in Moscow is from 1 million rubles. per month, monthly revenue ranges from 4 million to 6 million rubles. depending on location and time of year. Profit is usually around 20%. According to preliminary calculations, the revenue of the entire network in 2016 will exceed 360 million rubles, profit - 80 million rubles.

    An important feature of the format is that burgers do not need large premises. Burgers are quick to prepare and eat, and are often taken to go. In fact, this is fast food, although the average check is twice as high as in economy format establishments. So, the average check in BB & Burgers is about 700 rubles. (usually they take a burger for 380 rubles, a potato for 140 rubles and a drink for 170 rubles). The most popular burger is Drunk Granny, which is prepared according to a recipe Ivan brought from Chicago (original name drunken granny).

    Buns are baked in Malakhovka, beer (2-3 thousand liters per month) is purchased from a craft brewery, meat is ordered from market leaders Primebeef and Miratorg.

    “If earlier we set up a grill, a table and gave freedom to the chef - assemble it as you like, as long as it tastes good, now our kitchens are mini-factories,” says Kukarskikh. “Every movement is worked out: I took a bun, put a measured amount of ingredients on it, turned around, gave it away, repeated.”

    Kukarskikh is obsessed with the idea of ​​building a network of burgers throughout Russia and competing with McDonald's, so he decided to develop a franchise as well. In 2015, he found franchisees who opened a burger joint near the Kitai-Gorod metro station. We agreed on a royalty of 5% of the turnover, without a lump-sum fee. But six months later, the franchisees stopped paying the promised amounts, and then completely changed the sign. However, a few months later the institution closed, says Ilya Klimov, marketing director of the BB & Burgers chain. “The burger market within the Garden Ring is clearly overheated, it is now worth opening in good sleeping areas,” says Alexander Zalessky.

    This was done, for example, by former marketer and event manager Igor Nikulin, who opened a Bear Burgers burger shop a month and a half ago near the Preobrazhenskaya Ploshchad metro station, in the building of the cinema named after. Moscow City Council. He rented the former premises of a cafe with European cuisine, bought the necessary equipment for 200,000 rubles, and began selling burgers to managers from a nearby business center and visitors to local clubs and dance studios. At first, sales were not very good, but now regular customers have appeared, the entrepreneur sells 60 burgers a day, the average check is 600 rubles.

    Kukarskikh also seeks to open points outside the center. For example, I recently opened a second burger shop outside the Moscow Ring Road in the Riga Mall shopping center. But here BB & Burgers has a monopoly: the company occupies 150 sq. m opposite Kinomax, and there are no other cafes here. On weekdays, sales are poor, but weekends “make the box office”: people come to the cinema from all over New Riga and its environs. The opening of this point has already cost 20 million rubles, but Kukarskikh is convinced that he will recoup investments as the shopping center fills up.

    Ivan's fixed idea is to build a network of burgers throughout Russia, but he is still not sure that Moscow's burger fashion will reach the provinces. “Still, we have somewhat hothouse conditions here. Not everyone in the regions can afford burgers for 380 rubles,” he said.
